Homemade salmon fishcake recipe

Ingredients
Serves: 4
500g of potatoes peeled and chopped
500g salmon fillets
1 egg beaten
150g breadcrumbs
Pinch of salt & ground black pepper

Method
- Boil the potatoes in lightly salted water for 15-20 minutes until they are soft.
- Meanwhile place the salmon onto some foil, sprinkle with seasoning and wrap up into a parcel to put in the oven.
- Place the salmon into a pre-heated oven gas mark 5 and cook for 20 minutes.
- Drain the water from the potatoes and put back into the empty pan to mash.
- Allow the potato and salmon to cool before mashing together with a touch of salt and pepper to season.
- Using your hands form the mixture into 8 cakes.
- Dip each one into the beaten egg then cover with breadcrumbs, pressing down well to make sure they get an even coat.
- Place the salmon fish cakes under a medium grill and cook for 5 minutes each side or until the breadcrumbs have turned golden brown
- Serve with a wedge of lemon, salad or vegetables and a sauce of your choice.
