Homemade salmon fishcake recipe

Home made salmon fishcakes

Ingredients

Serves: 4

500g of potatoes peeled and chopped
500g salmon fillets
1 egg beaten
150g breadcrumbs
Pinch of salt & ground black pepper
lemon

Method

  1. Boil the potatoes in lightly salted water for 15-20 minutes until they are soft.
  2. Meanwhile place the salmon onto some foil, sprinkle with seasoning and wrap up into a parcel to put in the oven.
  3. Place the salmon into a pre-heated oven gas mark 5 and cook for 20 minutes.
  4. Drain the water from the potatoes and put back into the empty pan to mash.
  5. Allow the potato and salmon to cool before mashing together with a touch of salt and pepper to season.
  6. Using your hands form the mixture into 8 cakes.
  7. Dip each one into the beaten egg then cover with breadcrumbs, pressing down well to make sure they get an even coat.
  8. Place the salmon fish cakes under a medium grill and cook for 5 minutes each side or until the breadcrumbs have turned golden brown
  9. Serve with a wedge of lemon, salad or vegetables and a sauce of your choice.
