chicken kebabs with rice

Ingredients

Serves: 4

300g of rice
4 chicken breast cut into bite size pieces
1 red pepper cut into bite size pieces
1 yellow pepper cut into bite size pieces
16 whole mushrooms
½ onion cut into wedges
½ red onion cut into wedges
1 tbsp olive oil
2 tsp chicken seasoning

Method

  1. Preheat the grill.
  2. Prepare the rice according to the packet.
  3. Thread the chicken and chopped vegetables alternately onto the skewers.
  4. Lightly brush the olive oil onto the kebabs and sprinkle with seasoning.
  5. Put the kebabs under the grill turning occasionally until the chicken is cooked through.
  6. To serve place rice onto plates with chicken kebabs on top of the rice.
